I feel so sorry for all of you unfortunate souls out there who are deprived of Duke’s Mayonnaise. I had no idea the problem was so widespread.
In an effort to make things right with the world, I am giving away a 32 oz. jar of Duke’s Mayonnaise to THREE lucky readers. All you have to do is post the name of your favorite recipe that uses mayo. That’s it! You don’t have to post the whole recipe but I’d love it if you did! Contest will end on Thursday, July 31st. There’s no way I’ll be able to choose, so I’ll be picking the three names randomly.
Even though I’m not eligible (darn it!) I’ll kick things off. Actually this is not so much a recipe as it is a way to avoid looking like a piggie by eating plain tomatoes dipped in mayonnaise. And it’s also relieving my conscience since I was so mean to poor chicken legs the other day.
Start with a red, ripe tomato (more on these later in the week, from Guy Clark). And Duke’s. Don’t forget the Duke’s**.

Spread the mayo on two slices of bread. I’m using wheat bread because white bread makes me puff up like a marshmallow. If you are not afflicted with this unbecoming ailment, feel free to use white.

Place sliced tomatoes and grilled chicken thighs (Because dammitall they taste better than chicken breasts! There I said it. Now I’ll never get into the Junior League.)

You could add cheese too. Feel free. Cheese would totally work here.

You named my favorite with the tomato sandwich, I love a nice warm tomato right from the garden with lots of mayo and on white bread. I know that isn’t the healthy bread but I like soft white bread. We use whole wheat most of the time but a fresh tomato and mayo calls for white.
Mmmm, I love a good egg salad sandwhich with Mayo. In fact, I think I must go make myself one right now!

Here we go! Baked potato casserole. It calls for mayo, but I’ve always just used sour cream. Willing to try the mayo though!
1 (5-pound) bag of baking potatoes
1 (8-ounce) sour cream
1 cup mayo
1/2 cup chopped onions
1/2 cup real bacon bits
1/2 cup (1 stick) butter, melted
1 (1-ounce) envelope ranch dressing mix
1 cup shredded cheese
Preheat oven to 400°F.
Scrub potatoes, and bake, 1 hour or until done. Let potatoes cool, peel and cut into chunks.
Preheat to 350°F
In a large bowl, combine remaining ingredients. Add potatoes, and toss gently to combine. Spoon into 13x9x2 inch baking dish. Bake 40-45 minutes, or until hot and bubbly. Sprinkle shredded cheese over top & heat for 5 more minutes to allow it to melt.
well, the potato salad, the deviled eggs, the chicken salad, the blt – but don’t send me The DUKE, I can buy him in the store, and keep a spare in the pantry lest we run out.
So – the potato salad
potato cut into chunks – small red or ‘new’ potatoes – leave the skin on – or leftover baked, toss the skin
celery – small dice
green pepper – diced also
hard boiled eggs

some salt and maybe Lawreys

I love to make my own tartar sauce. I just use mayo and only my own homemade sweet relish. Its so yummmy!

Chocolate Mayonnaise Cake
INGREDIENTS
* 2 cups all-purpose flour
* 1 cup white sugar
* 4 tablespoons unsweetened cocoa powder
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 cup mayonnaise
* 1 cup water
* 1 teaspoon vanilla extract
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease one 11×7 inch pan.
2. Sift together flour, sugar, cocoa, baking powder, and soda. Add mayonnaise, cold water, and vanilla. Beat 2 minutes. Pour into prepared pan.
3. Bake at 350 degrees F (175 degrees C), 30-35 minutes. Frost if desired.
Cilantro Egg Salad
INGREDIENTS (Nutrition)
5 hard-cooked eggs, finely chopped
3/4 cup mayonnaise
3/4 cup chopped fresh cilantro
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1 teaspoon lime juice
1 stalk celery rib, finely diced
4 fresh mushrooms, finely diced
salt and pepper to taste
DIRECTIONS
In a medium bowl, stir together the eggs, mayonnaise, cilantro, mustard, lemon juice, lime juice, celery, and mushrooms. Season with salt and pepper to taste. Serve on bread or toast.

I have been racking my brain for something I use mayonaise in other than sandwiches, salads and deviled eggs.
My sister reminded me we use mayo as a dip on steamed artichoke. Sometimes we use butter instead, but you can’t go wrong either way. If you haven’t had an artichoke this way, you really must try it. Sooooooooooooo Goooooood!
I love clubs but for some reason all the places here only use lunch type sliced turkey . It is so much better when you use real turkey /chicken that you tear/cut off the bird and bacon ,tomato cheese and lettuce with mayo and pepper/salt. That’s the other thing I find weird here they bring you mayo on the side instead of putting it on the toast in the sandwich. You don’t need to enter me , this just made me think of that because I’m a dork. haha
We don’t have Duke’s mayo here in Kansas. But you make me drool looking at those homegrown tomatoes. We are getting a lot of tomatoes and I make a garlic and white vinegar salad. Yummy!
My fav. is just a plain ol’ tomato sandwich, just like yours (wheat bread and all) but skip the chicken thigh meat. oh.. and the tomatos absolutely MUST be home grown!
Okay, you’re seriously going to groan I’m sure…. but I really like the Ranch and Bacon pasta salad you buy in a box at the store. I know, easy way out, but with three boys a mom’s got to do what a mom’s got to do!
My mother in law got me a sign that says “A mother of boys works from son up to son down”. Yup, couldn’t have said it better.
Layered Taco Dip
1 large can refried beans
1 cup sour cream
1/2 cup mayo
1 pkg. Taco Seasoning
bunch green onions chopped
8 oz, grated cheese
Chopped lettuce
Diced tomatoes
Sliced black olives
Avocado dip (optional)
Tortilla chips
Heat refried beans in microwave spread on a round flat dish ( I don’t heat mine, just spread straight out of the can). Spread avocado dip on beans. Mix sour cream, mayo, and Taco seasoning and spread on avocado dip. Top with rest of ingredients. Refrig. 1 hour before serving.
This is yummy. A family favorite. And you don’t need to put my name in the drawing since I already won something from you!!! But I could do a whole blog on Duke’s mayo. lol
I love deviled eggs. No it’s not original, but it’s my favorite and everyone loves it when I make them. Can’t wait to try it with Duke’s. Never heard of it and it’s not anywhere around here.

Oh yum! That looked so good that I just had to run to the kitchen and make myself one! Only thing is we have no chicken so I had to just do with tomato… but it was still yum!
One of my favorite breakfasts when I was at uni was avocado and mayo on toast (with salt and pepper)! Slurp!!!

I just returned to New Braunfels, Tx. from Mt. Pleasant, South Carolina and am having a withdrawal from the Dukes Mayonnaise! OMG! That is the best “stuff” that’s ever passed these lips! I am having my friend in Mt. Pleasant UPS me 4 jars of Dukes! My recipe: Spread Dukes on two pieces of bread, slice bananas on one piece and place the other piece on top…..enjoy! And that’s it! OH MAMA! I’m missin’ the Dukes!
I know I am late in this game but I love Duke’s myself!
Here are some “biscuits” I have found:
2 cups of self rising flour (martha white or white lily work good)
1 cup of milk (buttermilk works too)
6 TBS mayo
mix together and put into a muffin tin. Bake at 450 for 10-15 minutes or until tops are done.
I just have to say that Dukes is the best. I’m from Greenville SC .Original birth place of Dukes mayo. I now in Boston MA and let me tell you there is no dukes up here. I have to have my dad send me jars of it UPS. It’s worth it. I have now converted my Canadian father in law who just eats it straight on salad…
my favorite Two slices bunny white bread, thick sliced home grown tomatoes and lots of Dukes
