A Recipe From Grandma Baker

Last year, the Cotton Husband’s aunt gave everyone a cookbook full of recipes from his Grandma Baker and it was one of the best Christmas presents ever. This is the only cookbook that stays on my kitchen table – the others are neatly stacked and organized according to title (Is anyone buying that? If so, then I’ll add that they are all clean and splatter-free.)

 

I didn’t have a lot of time with Grandma Baker – she passed away shortly after CH and I began dating but the time I did spend with her is precious to me.

 

She was a sweet, gentle, kind and intelligent woman.

 

Pumpkin and Sweetpea used to ask to go visit her. I don’t know very many children who ASK to go visit older people but that was Grandma Baker… she had a quality that drew people closer.

 

This is just one of her many treasured recipes…

Fresh Apple Cake

3 cups chopped apples

2 cups sugar

1 teaspoon salt

2 teaspoons baking powder

1 cup nuts

1 cup oil

2 1/2 cups flour

1 teaspoon soda

1 teaspoon vanilla

3 eggs

 

Mix oil, sugar and eggs well. Gradually add flour to cramed mixture, fold in apples and nuts. Bake in grased tube pan lined with wax paper. Bake in 350 degree oven for 1 hour. When cake is cooled a sugar glaze can be poured over the cake. (1 1/2 cups powdered sugar, 2 teaspoons vanilla, 3 tablespoons water – I like to also add a little brown sugar and cream).

I ws never very close to my Grandparents. But I have fond memories of the farm.
Now, I love older people. They have so much wisdom, and yearn to share it with someone.

Mmmmm, what a beautiful & precious memory =). Thanks for sharing, might give that recipe a try this fall, as soon as we go on a “pickin apples” date. Btw, I too am working on an apple pie memory blog, my boys love baking too! Great minds work alike ;) !

Oh, I have a fresh apple cake recipe that I love. I had forgotten about it until I saw this one. It looks delicious! Aren’t grandparents wonderful? Don’t you wish we could have had them when we were old enough to appreciate them!!

Mmm, now that looks GOOD! I’ve got another apple cake recipe I’ve been meaning to try, but it calls for 6 cups of apples, all peeled and cubed per cake.

This recipe looks like it might be a little more manageable and VERY yummy!

We just picked apples in the mountains this weekend and apple cake is one of my “to dos”. Older people have a special place in my heart. My Nanny is 94 (you know her) and so awesome – why don’t we record these people? Another of my “to dos” real soon. (Is today “Dirt” day???)

I miss my grandmother everyday. She was like a mother to me. That’s the one thing I regret I was unable to give my children, loving grandparents, although it was out of my control.

I’m going to try to adapt the apple cake recipe to gluten free. Looks so yummy I hope it works!

Hey, I was reading your post and I just wanted to say thank you for putting out such great content. There is so much nonsense on the internet these days its difficult to find anything worthwhile. I actually have cooked this recipe before, I got this book last month on recommendation from a friend http://ninjahq.com/go/cookingrecipes and it turned out really nice! I’m extremely eager to try your variation of it though, it looks excellent. I think you might enjoy those recipes, they’re very good. Thanks for the article and tips.
